What Are Microgreens?
It’s simple, really. When salad greens are seedlings with their first tiny leaves, they’re considered microgreens. So, instead of letting that seedling become a head of lettuce, we harvest it, capturing a nutritional bonanza and a fresh, flavourful ingredient.
So Small, So Mighty
Microgreens have been featured in high end dishes since the 1980s, but more recently, research about their nutritional benefits has made them a foodie fascination. Incredibly, multiple studies have shown that, in general, microgreens have more nutrients than they would as fully-grown greens. One tiny seedling packs a major dose of the potassium, iron, zinc, magnesium, copper, and antioxidants you need to thrive.
